Strawberry granita with mascarpone cheese

Ingredients:

  • 1 cup of water
  • 0.5 cup sugar + 1 tbsp.
  • 0.5 cup chopped fresh mint leaves
  • 2 cups sliced ​​strawberries + 1 cup finely chopped berries
  • 0.5 tbsp. mascarpone cheese
  • 3 tablespoons lemon juice
  • A pinch of salt

Preparation:

  1. In a small saucepan, combine water, 0.5 cups sugar, and mint and bring to a boil, stirring to dissolve the sugar. Let it simmer over low heat until the mint infuses. Then strain the syrup. Discard the mint.
  2. In a food processor, combine 2 cups of strawberries with the remaining 1 tablespoon of sugar. Process until pureed. Add the mascarpone cheese, lemon juice, and salt. Process until the mascarpone is completely incorporated. Add the mint syrup and process again. Transfer the strawberry mixture to an 8x8 inch glass dish and place it in the freezer. It will take about 4 hours to freeze.
  3. Before serving, scrape the granita with a fork. Divide it among chilled bowls. Top with finely chopped strawberries. Serve immediately.
