Ingredients:
Onion compote with bacon
- 6 slices bacon, chopped
- 2 tbsp (30 g) butter
- 3 onions, thinly sliced
- 3 cloves garlic, crushed
- 2 tablespoons balsamic vinegar

- Vegetable oil to grease the grill
- 1 kg of ground beef
- 4 mini baguettes or other buns, cut in half horizontally
- 110 gr. gruyere cheese, grated
- 110 g blue cheese, crumbled
- 2 cups arugula
Preparation:
Prepare the compote: In a large skillet over medium heat, cook the bacon, stirring occasionally, until crisp, about 4 minutes. Transfer with a slotted spoon to a paper towel-lined plate; reserve 1 tablespoon of the rendered fat in the skillet; discard the rest.
- Reduce heat to low and add butter to the skillet; swirl the pan to melt. Add the onion, cover, and cook, stirring occasionally, until golden brown, about 15 minutes. Remove the lid and add the garlic. Cook, stirring occasionally, until the onion is lightly caramelized, about 5 minutes. Add the vinegar and cook, stirring, until the onion is glazed, about 1 minute more. Add the bacon and season with salt and pepper to taste.
Fry the cutlets: Preheat the grill to medium-high heat and brush the grates with vegetable oil. Form the ground beef into four 2.5 cm thick patties and season with salt and black pepper. Grill for 4-5 minutes per side for medium-rare. Meanwhile, toast the buns.
- Serve the patties on buns and top with Gruyere, blue cheese, onion and bacon compote, and arugula.
