Ingredients:
- 3 tomatoes, cut into wedges
- 2 yellow bell peppers, coarsely chopped
- 1 cucumber, sliced
- 1/3 cup tomato juice
- 1/4 cup extra-virgin olive oil
- 3 tbsp sherry vinegar
- 1 tbsp chopped fresh chives
- 1 shallot, thinly sliced
- Flaked sea salt
Preparation:
- In a large bowl, combine tomatoes, bell pepper, cucumber, tomato juice, olive oil, and sherry vinegar; season with coarse salt and black pepper.
- Sprinkle the salad with chives, chopped shallots and flaky sea salt.
