Ingredients:
- 8 strawberries, hulled and thinly sliced (about 1 cup)
- 10 cups arugula
- 110 g Parmesan, crumbled with the tip of a knife (about 1 cup)
- 1 tbsp Dijon mustard
- 1 tbsp. sugar
- 2 tablespoons freshly squeezed lime juice
- 1/4 cup freshly squeezed orange juice
- 1/4 cup extra-virgin olive oil
Preparation:
- Combine strawberry slices, arugula, and crumbled Parmesan in a large bowl.
- In a medium bowl, whisk together the mustard, sugar, lime juice, and orange juice until combined. Pour in the olive oil in a thin stream, whisking with your other hand. Have someone hold the bowl or place it in the center of a rolled-up kitchen towel to keep it in place..
