Ingredients:
- 2 chicken breasts, cut into small pieces
- 1 cup premium flour
- 1 tbsp. seasoned salt
- 2 large eggs
- 2 cups spiced breadcrumbs
- Vegetable oil, for frying
- Ketchup, for serving
Preparation:
- In a plastic bag, combine flour, seasoning salt, and a pinch of salt and black pepper. In a bowl, whisk the eggs with 2 tablespoons of water. In a separate bowl, add the breadcrumbs.
- Dredge the chicken pieces in a bag of flour to coat them. Dip a few pieces at a time into the egg mixture, then roll them in spiced breadcrumbs.
- Heat about 2 inches of vegetable oil in a large skillet over medium-high heat. Add some breadcrumbs; they should sizzle immediately. Fry the chicken, in batches if necessary, until golden brown and cooked through, about 2 minutes per side. Transfer the nuggets to a paper towel to drain any excess oil. Serve with ketchup.
