Lo mein noodles with chicken

Ingredients:

    Noodles

  • 250 g chicken breasts or thighs, cut into thin strips
  • 2-3 cups fresh egg noodles
  • 3 tbsp (45 ml) vegetable oil
  • 4 tsp ginger, thinly sliced
  • 2 tsp (10 g) minced garlic
  • Half a carrot, thinly sliced ​​into strips
  • 125g small bok choy, trimmed and sliced ​​diagonally
  • 3 green onions, cut diagonally into 1 cm pieces.

    Sauce

  • 1/4 cup (60 ml) chicken broth
  • 3 tbsp (45 ml) oyster sauce
  • 1 tbsp (15 ml) soy sauce
  • 1 teaspoon cornstarch
  • 1 tsp. sesame oil

Preparation:

  1. Sauce:

    Combine chicken broth, oyster sauce, soy sauce, cornstarch, and sesame oil. Set aside.

    Noodles:

    Heat a skillet over high heat and add vegetable oil. Once it begins to smoke, add ginger and garlic and cook until golden brown and fragrant, about 20 seconds. Stir in the chicken and cook for about 1 minute.
  2. Add the noodles, carrots, and bok choy to the skillet and cook until softened, about 1 minute.
  3. Stir the sauce, pour into the pan and mix all the ingredients well.

    Continue frying until the chicken is cooked through and the sauce has thickened. Transfer to a serving platter, sprinkle with green onions, and serve immediately.
