Ingredients:
Quick pickled cucumbers
- 2 cups champagne vinegar
- 1/4 cup granulated sugar
- 1 tbsp. yellow mustard seeds
- 1 tbsp coarse salt
- 2 cloves garlic, lightly crushed
- 1 bay leaf
- 1 cucumber, sliced into 0.3 cm thick circles.
- 1 tbsp chopped fresh dill

- 1 cup mayonnaise
- 1/4 cup ketchup
- 2 tablespoons pickled jalapeño rings
- 1 teaspoon Dijon mustard
- 1/4 tsp granulated garlic
Burgers
- 0.7 kg of ground beef neck
- 220 g of ground beef brisket
- 1 - 2 tbsp. l. rapeseed oil (canola)
- 4 sesame buns
- 4-8 slices white American cheese
- Tomato slices, for serving
- Iceberg lettuce, for serving
Preparation:
- Quick pickled cucumbers:
Combine vinegar, 0.5 cups water, sugar, mustard seeds, salt, garlic, and bay leaf in a saucepan and bring to a boil. Once the sugar has dissolved, place the cucumbers and dill in a heatproof bowl and pour the brine over them. Let sit for at least 10 minutes. Chop 2 tablespoons of the pickled cucumbers for the dressing, and reserve the rest for serving.

Place mayonnaise, ketchup, jalapeño, sliced pickles, Dijon mustard, garlic, and a pinch of salt in a food processor. Puree until smooth, taste, and adjust the seasoning if needed.
- Cutlets:
Heat a cast iron skillet or large heavy skillet over medium-high heat. Combine all the ground meat and form into 4 balls using your hands.
Add oil to the heated grill. Place the meatballs on the grill surface and cook for 1-2 minutes on each side. Then, use a spatula to press down on the meatballs, flattening them. You want thin patties with a crispy crust all over, so press hard. Once the patty is well-cooked on one side, flip it over and cook the other side, about 4-5 minutes per side.
- Butter the sesame seed buns and toast them until golden brown. Place 1-2 slices of cheese on each bottom bun. Top with a patty, followed by a few tomato slices, pickles, and iceberg lettuce. Spread a little Thousand Island dressing on the top bun and top with your burger. Enjoy the true flavor of a classic burger.
