Menudo: Mexican Soup

Ingredients:

  • 450 g beef tripe, cut into small squares
  • 3 fresh cloves garlic, crushed
  • 3 teaspoons of salt
  • 0.5 cup red chili powder
  • 2 teaspoons oregano leaves
  • 1 tbsp. coarsely ground black pepper
  • 1 teaspoon cumin powder
  • Half a small onion, chopped
  • 1 small can hominy corn, yellow or white

Preparation:

  1. Place the beef tripe in a pot of boiling water, just enough to cover the tripe. Add the garlic, onion, and salt. Cover and simmer for about 1 hour.
  2. Once the tripe is tender, add the remaining ingredients, including the hominy, and simmer for another 15-20 minutes. Add more salt if needed. This spicy dish pairs well with cilantro and lime wedges. Serve with corn tortillas.
