Kid-Friendly: Mini Sloppy Joe Sandwiches

Ingredients:

  • 450 g of ground beef
  • 1 tbsp. vegetable oil
  • 1 tbsp chili powder
  • 3/4 cup ketchup
  • 1 tbsp light brown sugar
  • 1 tbsp. apple cider vinegar
  • 0.5 cups frozen diced carrots
  • 0.5 cup frozen small corn
  • 8 potato sliders or 12 mini potato sliders
  • 1 cup thinly shredded red cabbage
  • 1/4 cup pickled cucumber slices

Preparation:

  1. In a large nonstick skillet, heat the vegetable oil over medium-high heat. Add the ground beef and cook, stirring frequently, until it begins to brown, about 4 minutes. chili powder and 1 teaspoon of salt and continue to fry until the meat is cooked through, another 2 minutes. Drain any excess liquid and add back 2 tablespoons.
  2. Reduce heat to low, add ketchup, sugar, vinegar, and 1/2 cup water, and simmer, stirring occasionally, until the sauce thickens slightly, about 8 minutes. Add the carrots and corn and cook, partially covered, until the vegetables are tender and heated through, 5 minutes.
  3. Spoon a little sauce onto one half of each bun, top with a handful of shredded cabbage and a pickle, and serve.
