Baked Oatmeal Granola with Raisins

Ingredients:

  • 1 and 3/4 cups rolled oats
  • 0.5 cup raisins
  • 0.5 cup golden raisins
  • 0.5 tsp ground cinnamon
  • 0.5 tsp coarse salt
  • 1/4 teaspoon freshly grated nutmeg
  • 60 g unsalted butter, melted
  • 3 tablespoons firmly packed light brown sugar
  • 3 tablespoons maple syrup
  • 1 tsp vanilla extract

Preparation:

  1. Place a rack in the middle of the oven and preheat to 160°C.
  2. In a large bowl, combine the butter, brown sugar, maple syrup, vanilla extract, cinnamon, salt, and nutmeg. Add the oats and stir until evenly combined. Spread on a rimmed baking sheet.
  3. Bake the oat mixture until golden brown, 30-35 minutes, stirring halfway through. Let cool completely on the baking sheet. Stir in both types of raisins. Granola can be stored in an airtight container at room temperature for up to 5 days..
