Ingredients:
- 1/4 cup (60 g) butter
- 3 cups (300 g) onions, quartered and sliced
- 375 ml of water
- 1.5 tbsp dry chicken broth
- 1/4 cup (30 g) flour
- 430 ml of milk
- 3/4 tbsp. (100 gr.) grated mozzarella or suluguni cheese
- 3/4 cup (100 g) grated Swiss cheese
- Salt and pepper to taste
To make creamy croutons:
- 1.5 cups (80 g) bread, diced
- 3 tablespoons melted butter
Preparation:
- Melt the butter in a saucepan and sauté the onion for 10 minutes. Add water and dry chicken broth and bring to a boil. Cover and simmer for 15 minutes.
- Separately, mix the flour and milk and add to the saucepan. Whisk over medium heat until the mixture thickens. Remove from heat.
- Mix both types of cheese and add half to the soup. Stir until the cheese melts. Add salt and pepper to taste.
- Preheat the oven. Pour into ceramic cups, add the creamy croutons, and sprinkle the remaining cheese mixture on top. Bake in the oven until the cheese is melted. Serve.
- Creamy croutons:
Toss the bread cubes with melted butter. Bake in the oven at 180°C for 10–15 minutes, turning occasionally.
