Lentil brownies topcook.tomathouse.com
Ingredients:
- 0.5 cups dry light brown lentils
- 1 cup oatmeal
- 1/4 cup cocoa powder
- 0.5 tsp baking powder
- 0.5 tsp of soda
- 1/4 teaspoon coarse salt
- 0.5 cup natural applesauce
- 1/3 cup honey
- 1/4 cup creamy almond paste
- 2 tsp vanilla extract
- 1 egg
- 1 1/4 cups semi-sweet chocolate chips
Preparation:
- Preheat oven to 350°F (175°C). Spray an 8x8 inch (20x20cm) square baking dish with cooking spray and set aside.
- Place the dried lentils in a small saucepan and add 1 cup of water. Bring to a boil, cover, and simmer until the lentils are tender and most of the liquid has been absorbed, 15-20 minutes.
- Place the oats, cocoa powder, baking powder, baking soda, and salt in a food processor. Process until a flour forms.
- Add the cooked lentils (and any remaining liquid), applesauce, honey, almond butter, vanilla extract, and egg and process in a food processor until smooth. Using a spoon, stir in at least 1 cup of chocolate chips.
- Pour the batter into the prepared baking pan and smooth the surface with a spatula. Sprinkle with the remaining chocolate chips. Bake the brownies for about 25 minutes. Let them cool for at least 10 minutes, then slice and serve.
