Coffee panna cotta

Ingredients:

  • 0.5 cups whole milk
  • 1.5 tsp. unflavored gelatin powder
  • 1.5 cups heavy cream
  • 3 heaping teaspoons of instant espresso powder
  • 1/4 cup sugar
  • A pinch of salt
  • 1 small bar of white chocolate, for decoration
  • 1 small bar of dark chocolate, for decoration

Preparation:

  1. Pour the milk into a small, heavy-bottomed saucepan. Add the gelatin and let it sit for 5 minutes to soften. Stir over medium heat until the gelatin dissolves, but don't let the milk boil—about 2 minutes.
  2. Add the cream, espresso powder, sugar, and salt. Stir over low heat until the sugar dissolves, about 3 minutes more. Remove from heat and let cool slightly.
  3. Pour the creamy mixture evenly into 2 martini glasses. Cover and refrigerate. Stir every 20 minutes for the first hour. Refrigerate until completely set, at least 6 hours and up to 2 days.
  4. When you are ready to serveUsing a vegetable peeler, grate the chocolate bars until you have about 1 tablespoon of white and dark chocolate shavings. Sprinkle each panna cotta with chocolate shavings and serve.
