Pizza sauce "Marinara"

Ingredients:

  • 2 cans of 900g canned crushed tomatoes
  • 0.5 cups olive oil
  • 2 small onions, finely chopped
  • 2 cloves garlic, finely chopped
  • 2 stalks celery, finely chopped
  • 2 carrots, peeled and finely chopped
  • 0.5 tsp sea salt
  • 0.5 tsp freshly ground black pepper
  • 2 dried bay leaves

Preparation:

  1. Heat olive oil in a large saucepan over medium-high heat. Add the onion and garlic and sauté until the onion is translucent, about 10 minutes. Add the celery, carrots, and 1/2 teaspoon each of salt and black pepper. Cook until all vegetables are tender, about 10 minutes.
  2. Add the tomatoes and bay leaf and simmer over low heat until the sauce thickens, about 1 hour. Remove and discard the bay leaf. Season the sauce with salt and pepper to taste.
    Output: 1.8 l.
  3. The sauce can be made a day ahead. Let it cool, then cover and refrigerate. Reheat over medium heat before using.
