Bruschetta with white beans topcook.tomathouse.com
Ingredients:
- 1 can (400g) canned cannellini beans, rinsed
- 1 clove of garlic
- 1.5 tbsp extra-virgin olive oil
- 4 fresh sprigs of mint
- 6 fresh sprigs of thyme, leaves only
- 3 tbsp chives, chopped
- Coarse salt and black pepper
Preparation:
- Combine all ingredients except the chives in a food processor and process until a smooth paste forms. Transfer to a bowl.
- Serve spread on bruschetta and sprinkle with finely chopped chives.
