Sidecar cocktail with dried cherries

Ingredients:

  • 85 grams of Grand Marnier liqueur
  • 1/4 cup sugar
  • 1/4 cup dried cherries
  • Juice of 1 lemon, for dipping glasses
  • 170 grams of good cognac (aged for at least 2 years, but not more than 4 years)
  • 85 g freshly squeezed lemon juice (2 lemons)
  • Ice

Preparation:

  1. To coat the rim of the glass with sugar, pour the juice of 1 lemon into a shallow bowl and sprinkle the sugar on a saucer.

    Dip the rims of 2 glasses first in lemon juice, then in sugar. Set them aside to dry.
  2. In a small container, pour 60 grams of cognac over the dried cherries and heat in the microwave for 60 seconds. Set aside.
  3. Mix 85g of lemon juice and the remaining 110g of cognac, Grand Marnier liqueur and 1 tsp of the liquid obtained after soaking the cherries.

    Fill a shaker three-quarters full with ice and pour in the prepared cocktail mixture. Shake for 30 seconds (it's longer than you think) and strain into prepared glasses, either to the top or leaving some room for ice.
  4. Thread 3-4 soaked cherries onto small skewers and garnish cocktail glasses with them.
