Watermelon and Feta Salad topcook.tomathouse.com
Ingredients:
- Half a medium watermelon (about 1.3 kg)
- 1 cucumber, thinly sliced
- 1 package (110 g) feta, cut into 1 cm pieces.
- 1/2 cup pitted Kalamata olives, halved or quartered
- 1/4 cup extra-virgin olive oil
- Fresh mint leaves for garnish
Preparation:
- Trim the rind from the watermelon, cut the flesh into 2-cm cubes, and transfer to a large serving bowl (you should have 6 cups of watermelon flesh in total). Top with cucumber, feta, and olives.
- Drizzle with olive oil and season with a generous pinch of salt and black pepper. Just before serving, sprinkle with mint leaves and toss gently to distribute the ingredients evenly.
