Ingredients:
- 1 package (560 g) sweet potato waffle fries (potato fries)
- 1 tbsp ground ancho pepper
- 1 tsp ground cumin
- 1 teaspoon paprika
- 1/4 tsp cayenne pepper
- 1 tbsp. l. olive oil
- 220 g of ground beef
- 220 g of minced pork
- 1 small onion, finely chopped
- 2 cloves garlic, finely chopped
- 0.5 cups lager
- 1 can (425 g) fire-roasted diced tomatoes
- 1.5 cups grated cheddar
- 1.5 cups grated pepper jack cheese
- Sour cream, sliced red bell pepper, thinly sliced green onions, and sliced black olives, for topping
Preparation:
- Preheat oven to 220°C. Place sweet potato waffle fries on a parchment-lined baking sheet.
Combine ground chili pepper, cumin, paprika, and cayenne pepper in a small bowl. Sprinkle 1 teaspoon of the spice mixture over the waffle fries; set the rest aside.
- Bake the fries, stirring halfway through, until the edges are golden brown, about 25 minutes.
- Meanwhile, prepare the chili.:
Heat a large skillet over medium heat and add olive oil. Add the ground beef and pork and cook, breaking up the meat with a wooden spoon, until lightly browned, about 4 minutes. Reduce the heat to medium, add the onion and garlic, and cook until the vegetables are softened, 3 minutes. Sprinkle with the remaining spice mixture and season with salt; stir to coat.
- Add the beer and cook until almost completely dry, 1 minute. Add the tomatoes and adjust the heat to maintain a gentle simmer. Simmer, stirring occasionally, until the chili thickens, 15 minutes.
- Place the fries in the center of the pan or transfer them to a 9x13-inch baking dish. Sprinkle with half the cheeses, top with the chili, and sprinkle with the remaining cheese. Bake until the cheese is melted, 5 minutes.
- Drizzle with sour cream, sprinkle with bell pepper, green onions and olives.
