Bratwurst sausage with sauerkraut and fried potatoes with apples topcook.tomathouse.com
Ingredients:
- 600 g red potatoes, cut into 1 cm pieces.
- 3 tablespoons unsalted butter
- 6 cooked bratwurst sausages, halved lengthwise (about 600g)
- 2 Golden Delicious apples, cut into 1cm pieces.
- 1 bunch green onions, chopped
- 1 tbsp chopped fresh sage
- 1 tbsp. apple cider vinegar
- 1 tbsp. honey
- 1/4 cup sour cream
- 1 tbsp. grainy mustard
- 1 cup sauerkraut, rinsed and heated
Preparation:
- Preheat oven to 120°C.
- Bring a large pot of salted water to a boil, add the potatoes, and cook until tender, about 5 minutes. Drain and pat dry.
- Meanwhile, melt 1 tablespoon butter in a large skillet over medium heat. Add the sausage and cook, turning, until browned, about 4 minutes. Transfer to a rimmed baking sheet and keep in a warm oven to keep warm.
- Add 1 tablespoon butter to the skillet along with the potatoes and apples; toss to coat. Season with 3/4 teaspoon salt and black pepper to taste. Increase the heat to medium and cook, stirring occasionally, until the potatoes and apples are golden brown, 8 to 10 minutes. Add the green onions and sage and cook until the green onions are wilted, about 2 minutes.
- Add the vinegar, honey, and the remaining 1 tablespoon butter. Cook, stirring, until the potatoes and apples are glazed, about 1 more minute.
- In a small bowl, combine sour cream and mustard. Serve the sausages with potatoes and apples, sauerkraut, and sour cream sauce.
