Mushroom garnish for mashed potatoes

Ingredients:

  • 450 g of chopped assorted mushrooms
  • 2 crushed cloves of garlic
  • 1 teaspoon ground coriander
  • 0.5 tsp ground cumin
  • 0.5 tsp allspice

Preparation:

  1. Heat 2 tablespoons olive oil in a saucepan over medium-high heat. Add 450 g of sliced ​​mixed mushrooms, season with salt and pepper, and cook until tender, about 7 minutes; set aside.
  2. Add another 1 tablespoon of olive oil, 2 crushed garlic cloves, 1 teaspoon of ground coriander, and 0.5 teaspoon each of ground cumin and allspice. Cook, stirring, for 30 seconds.
  3. Stir in the mushrooms. Drizzle with the juice of half a lemon and sprinkle with finely chopped mint and parsley.
