Cornbread Turkey Stuffing topcook.tomathouse.com
Ingredients:
- 4 tablespoons butter
- 2 cups chopped onion
- 1 cup chopped celery
- 2 tbsp. fresh corn kernels
- 2 tablespoons of crushed garlic
- 1 cup diced sweet red pepper
- 220 g smoked ham, diced
- 2 eggs
- 3 cups chicken broth
- 0.5 cups heavy cream
- 2 tbsp chopped fresh coriander leaves
- 2 tbsp chopped fresh parsley leaves
- 8 cups toasted cornbread cubes
Preparation:
- Preheat oven to 190°C.
- Melt the butter in a frying pan and sauté the vegetables until softened. Add the ham and cook over low heat for another 2 minutes. Set aside to cool slightly. Mix the eggs, broth, cream, and herbs. Season with salt and pepper to taste.
- Combine all ingredients, including the cornbread, in a 4-quart lasagna dish and bake, covered with foil, for 30 minutes. Remove the foil and bake for an additional 20 minutes or until golden brown.
