No Bake Oreo Snowmen

Ingredients:

  • 450 g of filled chocolate cookies, such as Oreos (about 36 pcs.)
  • 110 g of cream cheese, room temperature
  • 2 cups white melting candies
  • 2-3 tsp. coconut oil
  • 16 small orange sprinkles or other small orange candies, such as Tic Tacs
  • 32 mini chocolate dragees in assorted colors
  • 8 red or green sour gumdrop ribbons, cut into 5-inch strips, then halved lengthwise
  • 1/4 cup semi-sweet chocolate chips
  • Black gel food coloring
  • Special equipment: 16 lollipop sticks and a pastry bag (optional)

Preparation:

  1. Line a baking sheet with parchment paper. Process the cookies in a food processor until fine crumbs form. Transfer to a medium bowl and add the cream cheese. Stir with a wooden spoon until smooth.
  2. Form about two-thirds of the mixture into 16 balls (about 1 tablespoon each) and place on the prepared baking sheet. Form the remaining mixture into 16 smaller balls (about 1 teaspoon each). Freeze until the truffles begin to firm up, about 15 minutes.
  3. Place a small truffle on top of each large truffle and press to make snowmen, then push a lollipop stick through the top of each snowman so that each one has a stick sticking out of the head (it's okay if the truffles crack when you poke them; just use your fingers to seal the cracks).
  4. Place the baking sheet with the snowmen in the freezer while you heat the melted candies.
  5. Microwave the candies and 1 teaspoon of coconut oil at 50% power in 30-second intervals, stirring, until smooth. Alternatively, melt the candies in a double boiler. Add an additional 1 teaspoon of coconut oil if the glaze is too thick.
  6. Holding the snowman by the stick, dip it in white icing to coat it completely, letting any excess drip back into the bowl. Return the snowman to the baking sheet. While the icing is still wet, press an orange candy onto the snowman's head to create a nose. Press two mini jelly beans covered in colored icing onto the sides of the head to create headphones. Repeat with the remaining snowmen.
  7. Refrigerate until glaze sets, about 5 minutes.
  8. Decoration:

    Wrap a strip of gummy bear ribbon around the neck of each snowman, gluing the scarves in place with a dab of icing.
  9. In a small microwave-safe bowl, combine the chocolate chips, 1 teaspoon coconut oil, and 1/2 teaspoon black food coloring. Microwave in 30-second intervals, stirring, until smooth.
  10. Transfer to a pastry bag or resealable plastic bag and snip off the corner. Pipe eyes and a strip connecting the earmuffs at the top of the snowman's head. Pipe three buttons vertically down the front of each snowman's body.
  11. Refrigerate until completely set, about 10 minutes.
