Ingredients:
- 60 g unsalted butter, melted
- 2 tablespoons firmly packed light brown sugar
- 2 tablespoons natural maple syrup
- 1 teaspoon pure vanilla extract
- 0.5 tsp coarse salt
- 1 and 3/4 cups rolled oats
- 1 cup chopped walnuts
- 1 cup freeze-dried bananas, crushed
- 1/3 tbsp. semi-sweet chocolate granules
- 0.5 cup dried strawberries, finely chopped
- 1/4 cup dried pineapple, chopped
Preparation:
- Position a rack in the middle of the oven and preheat the oven to 325°F (160°C). In a large bowl, combine the butter, brown sugar, maple syrup, vanilla, and salt. Add the oats and walnuts and toss to coat evenly.
- Place on a rimmed baking sheet and spread evenly. Bake the oat mixture until golden brown, 30-35 minutes, stirring halfway through.
- Let cool completely on the baking sheet. Stir in bananas, chocolate, strawberries, and pineapple. The granola can be stored in a tightly sealed container at room temperature for up to 5 days.
