Pork in hoisin sauce with rice topcook.tomathouse.com
Ingredients:
- 1/4 cup hoisin sauce
- 2 tbsp. l. + 1 tsp. rice vinegar
- Half a jalapeño pepper (remove seeds to reduce heat)
- 4 green onions, thinly sliced
- 1 pork tenderloin, 350g, trimmed
- 700 g frozen brown rice (about 5 cups)
- 100g snow peas, ends removed and pods broken in half
- 1 tbsp + 1 tsp extra-virgin olive oil
- 1 tbsp. grated peeled ginger root
- 2 tsp toasted sesame seeds
- 2 medium carrots, grated
Preparation:
- Preheat oven to grill mode.
- Combine the hoisin sauce, 1 tablespoon vinegar, jalapeño, half the green onion, and 1/4 teaspoon black pepper in a blender or mini food processor and process until smooth. Transfer to a bowl.
- Slice the pork tenderloin in half lengthwise and place both pieces cut-side down on a baking sheet. Sprinkle with 1/4 teaspoon salt and brush with half of the hoisin sauce mixture. Grill until golden brown and medium-rare, 5-8 minutes. Set aside.
- Combine frozen rice, peas, 1 tablespoon each olive oil and vinegar, ginger, 1 teaspoon sesame seeds, and 1/4 teaspoon salt in a microwave-safe bowl. Cover with plastic wrap and microwave until rice is heated through and peas are tender, 6 to 8 minutes.
- In a bowl, combine the carrots, remaining green onions, and 1 teaspoon each of olive oil, vinegar, and sesame seeds. Thinly slice the pork; serve with rice, carrot salad, and the remaining sauce.
