Indian-style fried potatoes with green peas

Ingredients:

  • 800 g frozen frying potatoes
  • 1 cup defrosted green peas
  • 1/4 cup plain yogurt
  • 1 teaspoon curry powder

Preparation:

  1. Combine 1/4 cup plain yogurt, the zest of half a lime, and a pinch of salt; set aside. In a large nonstick skillet over medium heat, cook half the sliced ​​red onion in 3 tablespoons vegetable oil, stirring, until softened, about 5 minutes. Stir in 1 teaspoon curry powder for 30 seconds.
  2. Add half an 800g bag of frozen diced potato fries and fry, stirring occasionally, until golden brown, about 12 minutes. Stir in 1 cup defrosted green peas. Fry until heated through, 1-2 minutes. Stir in 1/2 cup chopped cilantro. Drizzle with yogurt.
