Ingredients:
- 4 cups granulated sugar
- 1 cup light corn syrup
- 3 egg whites
- 2 tbsp. hazelnuts or pecans
Preparation:
- Combine 4 cups granulated sugar, 1 cup light corn syrup, and 3/4 cup water in a saucepan, then heat over medium heat, without stirring, until the mixture reaches 120°C (250°F) on a candy thermometer.
- Beat 3 egg whites until stiff peaks form; drizzle the hot syrup over the whites and beat until stiff peaks form. Add 1 teaspoon vanilla extract and 2 cups chopped hazelnuts.
- Using buttered hands, form the mixture into small balls, then roll in chopped nuts and let cool.
