Ingredients:
- 1 head of broccoli
- 3 tablespoons extra-virgin olive oil
- 4 cloves garlic, thinly sliced
- A pinch of red pepper flakes
Preparation:
- Bring a medium saucepan of salted water to a boil. Remove the broccoli florets from the stems, then trim any tough parts from the stems and slice them crosswise into thin slices. Add the broccoli florets and stems to the boiling water and cook until crisp-tender, 3 minutes. Drain and rinse the broccoli under cold water until completely cool. Pat dry.
- Heat the olive oil in a large skillet over medium-high heat; add the garlic and cook, stirring occasionally, until it begins to darken, about 2 minutes. Using a slotted spoon, transfer the garlic to a small bowl, leaving the olive oil in the skillet.
- Add the broccoli to the pan and sprinkle with red pepper flakes. Cook over medium-high heat, stirring gently to avoid breaking the florets, until the broccoli is crisp-tender around the edges, about 5 minutes. Return the garlic to the pan and stir. Season with salt and pepper to taste.
