Ingredients:
- 5 cups of crushed seedless watermelon pulp
- 1/3 cup sweetened coconut flakes
- 3 tbsp. condensed milk
- 2 tbsp. heavy cream
- Juice of 1/2 lime
- Coarse salt
- A pinch of ground cinnamon
Preparation:
- Preheat the oven to 200 degrees Celsius. Place the coconut flesh on a baking sheet and bake for 5-8 minutes, stirring occasionally, until golden brown. Transfer to a bowl and let cool.
In a small bowl, combine condensed milk, heavy cream, lime juice, and a pinch of salt. Place the watermelon in a larger bowl and drizzle with the condensed milk mixture. Sprinkle with toasted coconut and cinnamon.
