Mashed potatoes with sour cream, bacon, and chives

Ingredients:

  • 900 g of unpeeled Yukon Gold potatoes
  • 1.5 cups sour cream
  • 110 g unsalted butter
  • 0.5 cup finely chopped fried bacon
  • 1/4 cup thinly sliced ​​fresh chives

Preparation:

  1. Place the potatoes in a medium saucepan, cover with cold water, and add 2 tablespoons of salt. Bring to a boil and simmer, uncovered, until tender, about 45 minutes. Drain.
  2. Peel the potatoes and return them to the pan (optional, mash them after peeling). Mash the potatoes with the sour cream and butter using a fork or potato masher. Add the bacon, green onions, 2 teaspoons of salt, and freshly ground black pepper to taste.
