Belgian Sweet Potato Waffles

Ingredients:

  • 1.5 cups peeled and diced sweet potato
  • 2 cups premium flour
  • 1 tbsp baking powder
  • 0.5 tsp salt
  • 6 egg whites at room temperature
  • 1 cup of milk
  • 1/4 cup firmly packed light brown sugar
  • 1/4 cup melted butter
  • 1 tbsp. l. grated orange zest
  • Cooking spray to spray the waffle iron
  • Special equipment: steamer basket and waffle iron

Preparation:

  1. Place the diced sweet potato in a steamer basket. Place the basket in a large pot of boiling water at least 5 cm from the bottom of the steamer. Cook for 20 minutes, until tender. Mash the cooked sweet potato and set aside.
  2. In a large bowl, combine the flour, baking powder, and salt and set aside. In another bowl, combine the sweet potato puree, milk, brown sugar, butter, and grated orange zest.
  3. Combine the mashed sweet potato with the flour mixture and mix thoroughly. Whisk the egg whites until stiff peaks form. Gradually fold the beaten whites into the batter, a third at a time. The batter should be thick. Drop 2 spoonfuls of batter onto a preheated, greased waffle iron and cook until the waffles are golden brown, about 5-6 minutes.
