Ingredients:
- 12 hard-boiled eggs, peeled
- 0.5 cup mayonnaise + extra for greasing
- 1 tbsp Dijon mustard
- 2 teaspoons adobo sauce from a jar of chipotle peppers
- 1 tsp smoked paprika + extra for sprinkling
- Special equipment: pastry bag, grill basket
Preparation:
- Preheat grill to medium-high heat.
- Slice each hard-boiled egg in half lengthwise. Place the egg yolks in a medium bowl and mash with a fork. Add the mayonnaise, mustard, adobo sauce, and paprika and mix until smooth; season with salt and pepper to taste. Transfer the mixture to a pastry bag and refrigerate until ready to use.
- Lightly coat the cut sides of the whites with mayonnaise. Place them cut-side down in a grill basket; close the basket. Place the basket directly over hot coals and grill until the whites are charred, 30 seconds to a minute. Transfer the whites to a serving platter and refrigerate until ready to serve.
- When ready to serve, pipe a small amount of the yolk filling into each egg white half and sprinkle with paprika.
