Cucumber Raita: An Indian Cucumber and Yogurt Snack topcook.tomathouse.com
Ingredients:
- 2 cups plain yogurt (any fat content)
- 2 tbsp. grated cucumber (unpeeled)
- 1 clove garlic, minced
- 4 sprigs of fresh mint, leaves only, finely chopped
- 1 teaspoon coarse salt
- 2 tablespoons golden raisins
Preparation:
- Stir the yogurt until smooth. Add the remaining ingredients, along with a little freshly ground black pepper, if desired. Stir, let sit in the refrigerator, and serve.
