Fresh tomato, basil, and brie sauce for pasta topcook.tomathouse.com
Ingredients:
- 450 g thin spaghetti
- 900 g of bull's heart tomatoes (about 3 medium)
- 1/4 cup extra-virgin olive oil
- 1/4 cup chopped fresh basil leaves, plus extra for serving
- 200 g Brie cheese, cut into 1 cm pieces.
Preparation:
- Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions.
- Meanwhile, coarsely grate the tomatoes into a large bowl, discarding any large chunks of skin. Stir in the olive oil, basil, and 2 teaspoons of salt. Add the Brie cheese.
- Drain the pasta, setting aside 1/4 cup of the cooking water. Add the pasta to the tomato mixture and stir. Add the pasta cooking water, a little at a time, to rehydrate the pasta if needed and help the Brie partially melt.
