Ingredients:
- 3 cups premium flour + extra for dusting
- 3/4 cup chopped mixed greens and celery leaves
- 1 tbsp baking powder
- 1 teaspoon of baking soda
- 1 teaspoon of salt
- 6 tablespoons chilled unsalted butter, cut into small pieces
- 1.5 cups of chilled yogurt or kefir
Preparation:
- In a bowl, combine flour, herb mixture, baking powder, baking soda, salt, and 1/4 teaspoon black pepper. Blend the butter with a pastry blender until coarse sand forms. Stir in the sour milk.
- Place the dough on a floured sheet of parchment paper and form it into a 2cm thick rectangle.
- Using a large knife, cut the dough into 5cm squares. Cover with plastic wrap.
