Greek-style lamb topcook.tomathouse.com
Ingredients:
- 4 lamb cutlets on the bone
- 6 tomatoes, halved
- 1 red onion, sliced into rings
- 4 unpeeled garlic cloves
- 75 g Greek olives
- 1 teaspoon dried oregano
- 2 tsp. cane sugar
- 4 tbsp red wine
- 1 tbsp. wine vinegar
- Salt and ground black pepper
Preparation:
- Preheat the oven to 220°C. In a large baking dish, arrange the meat, tomatoes (cut side up), onion, garlic, and olives. Sprinkle with oregano, sugar, salt, and pepper, and drizzle with wine and vinegar.
- Bake for 15 minutes or until done to your liking (the tomatoes should burst and the lamb should be golden brown). Serve immediately, basting with any liquid from the pan.
