Breakfast burger with egg

Ingredients:

  • 1/4 cup ketchup
  • 1 tbsp. l. brown sugar
  • 1 teaspoon Worcestershire sauce
  • 0.5 tsp chili powder
  • 1/4 tsp hot chili sauce
  • 700 g of ground beef with 20% fat content
  • 1 tsp sweet paprika
  • Coarse salt and freshly ground black pepper
  • 4 thick slices bacon, cut in half crosswise
  • 4 large eggs
  • 4 sesame buns
  • 4 tablespoons unsalted butter, melted for greasing
  • 4 slices Havarti cheese

Preparation:

  1. Preheat oven to 350°F (175°C). Combine ketchup, brown sugar, Worcestershire sauce, chili powder, and hot sauce in a small bowl. Set aside.
  2. Using a fork, gently mix the ground beef with the paprika, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Form into four 12 cm diameter patties. Cover and set aside.
  3. In a large nonstick skillet, cook the bacon over medium heat until the fat has rendered and the bacon is crisp, about 8 minutes. Transfer to a paper towel-lined plate to drain. Pour most of the fat from the skillet into a bowl, reserving about 2 teaspoons. Heat the skillet over medium-high heat.
  4. Add the patties to the pan, 2 at a time, and cook until golden brown, 4 minutes. Flip and cook on the other side until cooked through, about 4 minutes for medium-rare. Repeat with the remaining patties. Place the patties on a rimmed baking sheet and place in the oven to keep warm while you fry the eggs.
  5. Wipe out the skillet. Add 1 tablespoon of rendered bacon fat to the skillet and heat over medium-high heat. Crack the eggs into the skillet and cook until the whites are set, about 5 minutes. Season with salt and pepper.
  6. Meanwhile, brush the buns with melted butter. Place them on a rimmed baking sheet and lightly toast in the oven for about 10 minutes.
  7. Assemble the burger by placing the patty on the bottom bun, adding a slice of cheese, 2 slices of bacon, and a fried egg. Spread a little hot ketchup on the top bun and top the burger.
