French salad with carrots

Ingredients:

  • 4 large carrots
  • 1-2 cloves of garlic
  • Orange juice and grated zest
  • 2-3 tablespoons chopped green parsley
  • Salt, black pepper
  • A spoonful of crushed peanuts
  • 3 tablespoons peanut butter

Preparation:

  1. Grind the crushed garlic with salt, pepper, orange juice, zest and peanut butter.
  2. Coarsely grate the peeled carrots and mix with half the parsley. Drizzle with the prepared dressing and stir. Sprinkle with herbs and nuts before serving.
