Ingredients:
- 3 ripe avocados, cut in half and scoop out the flesh into a bowl
- A quarter of a white onion, chopped
- 1/2 cup tightly packed fresh cilantro (leaves and thin stems only)
- Juice of 2 limes
- 1 small clove of garlic, chopped
- 12 standard or 24 mini corn muffins
Preparation:
- Combine the avocado, onion, cilantro, lime juice, garlic, and 1 teaspoon salt in a food processor and process until smooth. Use the guacamole immediately or cover with plastic wrap and refrigerate for up to 2 hours. Top corn muffins with guacamole and enjoy immediately!
