Ingredients:
- 900 g medium potatoes, thoroughly washed (3-4 tubers)
- 80 g unsalted butter, room temperature, cut into pieces
- 1 cup warm cream 10%
Preparation:
- Place the potatoes in a large saucepan, add enough cold water to just cover, and season generously with salt. Bring to a boil over medium heat and simmer, uncovered, until the potatoes are tender, 45-55 minutes.
- Drain the potatoes, peel them with an oven mitt or kitchen towel, and transfer them to a large bowl. Add the butter, warm cream, 1.5 teaspoons of salt, and a few turns of the black peppercorns. Mash with a potato masher.
