Spicy rice with beer

Ingredients:

  • 2 cups long grain rice
  • 1 bunch of cilantro
  • A quarter of a red onion
  • 1 cup frozen peas

Preparation:

  1. In a blender, combine 1 bunch of cilantro, 1/4 red onion, 2 cloves of garlic, 1/2 cup of beer, 1 tbsp of coarse salt, and 1 tsp of cumin. Puree until smooth.
  2. Fry the mixture in a saucepan with a small amount of vegetable oil, stirring, until fragrant, for 5 minutes. Add 2 cups of long-grain rice and stir. Add 2 cups of chicken broth and simmer for 20 minutes.
  3. Stir 1 cup of defrosted carrot and green pea mixture into the rice and let sit for 5 minutes.
