Ingredients:
- 220 g of minced pork
- 3.5 tbsp lime juice
- 3 tablespoons fish sauce
- 1 tbsp. l. glutinous rice powder
- 0.5 tsp sugar
- A small pinch of ground chili pepper
- 1 tbsp red and white onions (thinly sliced and mixed)
- 1 tbsp fresh cilantro and green onions (chopped and mixed)
- 1 tsp lime leaves (very thinly sliced)
- 1 tbsp lemongrass (thinly sliced)
- 1 large wheat tortilla (like for a burrito)
- 1 teaspoon mayonnaise
Preparation:
- In a small saucepan, bring 0.5 cups of water to a boil. Add the pork and stir until the pork is cooked through. Turn off the heat and drain.
- Add lime juice, fish sauce, rice powder, sugar, and ground chili. Stir with a wooden spoon until the pork is evenly coated. Add red and white onions, cilantro and green onions, lime leaf, and lemongrass. Stir with a wooden spoon. This is lab.
- Heat the tortilla in a hot skillet until soft. Place the tortilla on a cutting board, spread with mayonnaise, and place the lab directly in the center of the tortilla. Roll it up like a burrito. A delicious and healthy lunch is ready!
- Rice powder:
To make Thai rice powder at home, fry about 1 cup of uncooked jasmine rice in a pan with a small handful of galangal, a small handful of lime leaves, and a small handful of lemongrass. Stir the mixture over low heat until crisp and the rice begins to darken. Transfer the mixture to a food processor and pulse until it turns into a fine powder.
