Rainbow Fruit Ice

Ingredients:

  • 5 teaspoons each of dry mix for strawberry, orange, lemon, lime, blueberry and grape jelly
  • 6 tsp. ultrafine sugar
  • 3 and 3/4 cups boiling water

Preparation:

  1. Place the jelly mixtures separately in small bowls. Add 1 teaspoon of superfine sugar.
  2. Starting with the strawberries and working with one flavor at a time, pour 0.5 cups and 2 tablespoons of boiling water into each bowl. Stir gently until the gelatin and sugar dissolve.
  3. Evenly divide the strawberry jelly among ten 90 ml (3 fl oz) popsicle molds (about 1 tablespoon per mold). Freeze until completely set, about 15 minutes. Repeat with the remaining flavors in the following order: orange, lemon, lime, blueberry, and grape.
  4. Place lids on popsicle molds and insert wooden sticks. Freeze until completely set, about 8 hours or overnight.
  5. Remove the popsicles from the freezer. Let them sit at room temperature until they slide out easily, about 10 minutes.
