Ingredients:
Solar refueling
- 1 cup mayonnaise
- 1 cup sour cream
- 0.5 cup Dijon mustard
Lemon zest
- 1 tbsp lemon juice
- 0.5 tsp grated garlic
- 0.5 tsp coarse salt
- 0.5 tsp ground black pepper
Salad
- 450 g penne pasta (feathers)
- 4 cups red grape tomatoes, halved
- 4 cups yellow grape tomatoes, halved
- 2 cups frozen corn, thawed
- 1 red bell pepper, seeded and cut into strips
- 1 orange bell pepper, seeded and cut into strips
- 1 yellow bell pepper, seeded and cut into strips
- One can (450g) banana peppers, drained and thinly sliced
- 1 lemon, thinly sliced for serving
Preparation:
- Solar refueling:
In a medium bowl, combine mayonnaise, sour cream, mustard, lemon zest, lemon juice, garlic, salt and black pepper and mix until smooth.
- Salad:
Cook the pasta in salted water according to package directions. Drain and rinse under cold water. Let it dry slightly to allow the dressing to adhere well.
- Pour the sauce over the pasta in a large bowl and toss to coat. Add the grape tomatoes, corn, bell peppers, and banana peppers and gently toss to distribute the ingredients evenly. Transfer the salad to a serving platter and garnish with lemon wedges.
