Spicy coleslaw topcook.tomathouse.com
Ingredients:
- 2 x 400g bags of shredded coleslaw mix
- 1/4 cup mayonnaise
- 1/4 cup chopped pickled jalapeño peppers + 2 tablespoons brine from jar
- 1/4 cup apple cider vinegar, add more if needed
- 1/4 cup canola oil, add more if needed
- Half a Vidalia onion, chopped
Preparation:
- In a large bowl, combine the coleslaw mixture, mayonnaise, pickled jalapeños and brine, vinegar, oil, onion, salt, and pepper to taste. If the salad seems too dry, add more vinegar and oil.
