Strawberry blondie

topcook.tomathouse.com

Ingredients:

  • 4 tablespoons unsalted butter, plus extra for greasing
  • 1 cup light brown sugar
  • 1.5 tsp vanilla extract
  • 1 large egg, lightly beaten
  • 3/4 cup premium flour
  • 0.5 tsp salt
  • 1/4 tsp baking powder
  • 1/4 cup toffee pieces
  • 1/4 cup chopped walnuts
  • 3 tablespoons strawberry jam

Preparation:

  1. Preheat oven to 175°C. Line a 20cm square baking sheet with foil, pressing it into the corners and sides; leave an overhang on both sides. Grease the foil with butter.
  2. Place 4 tablespoons of butter and brown sugar in a large microwave-safe bowl. Microwave until melted, about 1 minute. Stir in the vanilla extract. Let cool slightly, then whisk in the egg.
  3. In a small bowl, combine the flour, salt, and baking powder. Stir into the butter mixture. Add the toffee pieces and nuts and press the batter into the prepared pan. Spoon the jam on top and run a knife through the jam to seal it in place.
  4. Bake until set, 20-25 minutes. Let cool on a wire rack for 15 minutes, then remove the foil and transfer the blondies to a wire rack to cool completely. Remove the foil and cut the blondies into strips.
