Ingredients:
- 3/4 cup superfine sugar
- 0.5 cup balsamic vinegar
- A pinch of salt
- 3 red Bartlett pears
- 3 Comice or Bosc pears
- 110 g Italian biscotti with almond or vanilla flavor
- 220 g mascarpone cheese or caramel or cinnamon flavored ice cream
Preparation:
- In a bowl, combine sugar, vinegar, a pinch of salt, and a few grinds of black pepper. Stir well. Let sit for 15 minutes.
- Meanwhile, slice the pears (with the peel) into thin wedges, removing the seeds and stems. It's best to cut the fruit in half, then use a watermelon scoop to scoop out the seeds, and then trim off a small piece of the stem.
- Place the pears in a bowl and toss thoroughly. Once the balsamic mixture is ready, pour it over the fruit and gently toss to coat evenly. Carefully divide the biscotti among 6 serving bowls. Transfer the pears to plates and garnish with a spoonful of mascarpone cheese or a scoop of caramel or cinnamon ice cream. Serve immediately.
