Spicy Caramelized Sweet Potatoes topcook.tomathouse.com
Ingredients:
- 2 x 800g cans of sliced sweet potatoes, drained
- 0.5 cup pecans, finely chopped
- 6 tablespoons unsalted butter, cut into small pieces
- 2 tablespoons frozen orange juice concentrate, thawed
- 1/3 cup brown sugar
- 2 teaspoons pumpkin pie spice mix
- 1/4 tsp cayenne pepper
- 3 cups mini marshmallows
Preparation:
- Spray the inside of a 5-quart slow cooker with cooking spray. In a large bowl, combine the sweet potatoes, pecans, butter, and orange juice concentrate until smooth.
- In a small bowl, combine brown sugar, pumpkin pie spice, and cayenne pepper. Sprinkle the mixture over the sweet potatoes and toss to combine. Transfer to the slow cooker.
- Cover and cook on low heat for 2-3 hours.
- Sprinkle the sweet potatoes with marshmallows. Cover and cook for another 15 minutes or until the marshmallows are melted.
