Breakfast burgers with fried eggs and spicy maple sauce topcook.tomathouse.com
Ingredients:
Buns
- 4 small ciabattas, cut in half horizontally
- 4 tbsp store-bought butter with garlic and herbs, melt
Burgers
- 350 g of ground beef with 20% fat content
- 4 strips fried bacon, broken into pieces
- 1 teaspoon hot or smoked paprika
- 3/4 teaspoon coarse salt
- Freshly ground black pepper
- Olive oil to drizzle
- 4 slices Asiago cheese
- 1 jalapeño
- 3 tbsp hot sauce + more to taste
- 3 tablespoons maple syrup
- 4 fried eggs
Preparation:
- Preheat oven to 95°C.
- Buns:
Pinch a small piece of crumb from each bun to create a well. Brush the inside of each bun, top and bottom, with melted butter. Close the buns and wrap them individually or together in foil, then place them directly on the oven rack to warm through, for no more than 20 minutes.
- Cutlets:
In a large bowl, combine the ground beef, bacon, paprika, salt, and a few grinds of black pepper. Gently mix with your fingers, using a pitchfork, without compacting the ground beef. Form the ground beef into a ball and divide it in half, then divide each half in half again to make 4 equal portions.
- Drizzle a little olive oil over a griddle and heat over high heat. Carefully form each portion of the minced meat into a ball and place it in the pan. Press each ball with a spatula until it's flat and slightly larger than the buns.
- Cook the patties until they release easily from the pan, 2-3 minutes. Flip them over, then top with a slice of cheese and continue cooking until the patties are cooked through and the cheese is melted, another 2-3 minutes.
- Meanwhile, add the jalapeños to the pan and brown them on all sides, then remove and finely chop, removing the seeds if you want to tone down the heat.
- Assemble the burgers:
In a small bowl, combine the hot sauce and maple syrup. Remove the buns from the oven and unwrap them. Place a patty on each bun, then drizzle with maple syrup. Top with a few jalapenos, then a fried egg and a drizzle of more hot sauce.
