Ingredients:
- 120 ml of skim milk
- 1 small package (4 servings) instant sugar-free, fat-free vanilla pudding mix (recommended: Jell-O)
- 90 ml coconut rum
- 30 ml lime juice
- 0.5 cups canned pineapple chunks in juice, do not drain
- 1 cup fat-free whipped topping, thawed
- Pineapple wedges for garnish
- Lime wedges for garnish
Preparation:
- Combine the milk and pudding mixture in a bowl until smooth. Add the rum, lime juice, and pineapple and mix well. Top with whipped topping. Once the mixture is smooth, divide it into 8 shot glasses.
- Refrigerate the shot glasses until ready to serve, at least 30 minutes. Garnish with pineapple wedges and lime slices, if using. Enjoy with a spoon!
