Light Frozen Chocolate Mousse Pie topcook.tomathouse.com
Ingredients:
- 1/2 cup dark chocolate chips
- 1/2 cup semi-sweet chocolate chips
- 1/4 cup low-fat milk
- 2 tablespoons dark corn syrup
- 2 tablespoons chocolate-flavored liqueur
- 1 tsp vanilla extract
- 2 tbsp. dry egg white
- 1.5 cups prepared frozen low-fat cream filling (defrosted)
- 1 pack 23cm diameter pie crust, pre-baked according to package directions and chilled
- Half a 30g piece of grated semi-sweet chocolate, for decoration
Preparation:
- Melt both types of chocolate chips with milk in a double boiler over low heat. Remove from heat and add corn syrup, chocolate liqueur, and vanilla extract. Stir and let cool completely.
- In a medium bowl with an electric mixer on high speed, beat the egg whites with 6 tablespoons of water until glossy peaks form, 2-3 minutes. Using a silicone spatula, gently fold the beaten egg whites and whipped cream filling into the cooled chocolate mixture until smooth.
Place on the prepared crust and smooth it out. Cover with plastic wrap and freeze for a couple of hours until completely frozen. Garnish with grated chocolate and serve.
Culinary advice: Powdered egg whites can be purchased at most high-end grocery stores or specialty stores in the cake decorating section.
